I do alot of cooking with pressure cookers instead of letting the cooker sit 15-20 minutes cooling I take it to the sink andd run water over the cooker till the little rivet thing drops and releases the pressure. Stuff gets cooked but not over cooked. Actually the book that came with cooker said to do it that way
