| I've thought about the boiling out thing. That has to be what is happening, but I don't quite see how. The pressure in the jar and outside the jar is going to be relative the same as a waterbath. I do let the jars set in the canner for a good 10-20 minutes before removing them-bringing the pressure back to zero naturally. There is some boil, but not enough to affect the level in the jar. If I can get my hands on more yet this year, I'll try a water bath, or drop to 5 lbs of pressure as my old National Canner book suggests.
