You should have no problems at all with any of those jobs IMHO.
I would go with the 7810 though, it has the 8.1L motor and is more than enough at 200hp even though it is not intercooled.
I had one that I chipped and was around 225hp, no problems ever with over heating.

If you find a 7810 with autoquad, they had the electric engine management similar to any 8000. With this model you can put in a chip and drive on.
I used a Blixton II, and it worked awesome.

I ran Michelin tires and had no trouble getting power to the ground, did not ballast either.
It had 18.4/R42 rears duals and 14.9/R30 fronts.
Had a friend with the same size rubber but in Firestone, and there is no comparison in performance between the 2.

Get the Michelins if you want to use the power on this size tractor.
