If you are talking winter wheat, the problem is no preharvest dormancy such as is bred into spring wheats. You put it in 30 ft swaths and it doesn't take very much rain at all to have sprouted wheat.

Properly timed preharvest Roundup helps it go through the combine too. Doesn't carry the rain risk swathing would.
