WCIL | In my family's opinion there is nothing better. My son who is a DSM will find a reason to swing by. 1 former part time teenager is in Afganistan. Was really dissapointed that I couldn't send him some. To have left overs I have to cut them up and hide them.
Crust
2 C flour
3/4 C pwd sugar
1 C butter
Filling
4 eggs (Eggbeaters will work, I was desperate one day)
2 C sugar
1/2 C flour
1/2 tsp salt
4 C diced Rhubarb
Preheat oven to 350.
Crust: Combine flour, and pwd. sugar: cut in butter until crumbs form. Press into bottom of a 15 x 10 x 1 " jelly roll pan. Bake at 350 15 minutes . While crust is baking prepare filling.
Filling: Blend eggs, sugar, flour and salt until smooth. Fold in rhubarb. Spread over hot crust, bake 40- 50 minutes until filling is lightly browned. Cool: cut into squares or bars. | |
