I'd probably go through the cover where you are showing in the first picture.
Just make sure you leave enough loose wire to be able to remover the cover easily and leave it hanging with the wires connected.
The location/positioning of that box looks like somewhat of a piss poor design. Definitely not the first instance of that concerning hog building equipment.
It's like they throw it together and then say "good enough". I just hope the pin that connects the motor to the screw shaft doesn't shear. Looks like it would be very nasty.
