We had that problem with our 04 5.9l Dodge. You may want to see if it throws a fault code, but ours was the throttle position sensor. It behaved just like you are explaining, but only once in a while. Then it started to get more frequent. They are expensive so like I said it might be worth the money to see what the fault code is to rule out which sensor needs replacing.
