I learned from Alton Brown on the Food Network to bake Brown rice in the oven. Use a 2 to 1 ratio of water to rice.
I use a dash of salt a teaspoon or so of olive oil, 1 cup of rice ( I use short grain brown) and two cups of boiling water or liquid. Put it into a baking dish or casserole and seal top tightly with foil and put into a 350 degree oven for 50 minutes. That is it. Remove the foil carefully stir and serve. Always comes out good and it is very easy.
Add to it what you want or eat plain. Add some black or pinto beans and you have the whole meal deal and lots of fiber.
Short grain rice is usually used in risotto or Spanish paella.
