Alot of the beef jerky you buy comes from older bulls as it is significantly cheaper then buy steer or a heifer. ive seen cutting at branding time, banding after they get their first drink from momma, and banding at branding. seen cattle wanna lay down for awhile after banding them after they get branded, and as long as the flies arent to bad and its not to warm, cutting is just as effective and can be as safe.
