Kim, look into epoxy treatments for your counter top.....
Can't remember if you have a square edge or rounded, but if you have square you're set, put an Oak trim board all the way around with like an 1/8 inch lip. Then mix up your epoxy and pour it in....hopefully you can a Color you like....
