truth is the signature doesn't do much for YOU it is simply an argueing point for the vendor & the merchant carrier i.e. which one is liable in the event of fraud etc
today you see fast food vendors, gas stations, starbucks etc with set arbitrary amounts that you don't have to sign for....they just want to turn customers, its that simple and they are willing to take more fraud responsibility in lieu of less merchant(interchange fee) charges for taking on the fraud for X sized transaction
same goes for "pay at the pump" they are willing to eat the fraud risk because its all about moving product & playing the percentages...and they do eat fraud, what criminal wouldn't go test a card to see if it works and get a free tank of fuel?
also some c-stores will have different merchant services/contract for grocery items vs fuel....
don't over think it, just a numbers game at the end of the day
