Subject: Baked Boneless chicken wings


Night or hours before serving:
1. Boil wings in sweet tea until done
2. Remove skin (boiling first also helps to make the skin come off very easily)
3. Optional: soak in favorite sauce or marinade for 2+ hours in the fridge (If I do this I do it right after they have cooled following the sweet tea boil and allow them to marinade over night)

Prior to serving:
1. If not using marinade, dust with favorite rub or seasoning (I conservatively dust them with crushed celery seed, black pepper and garlic salt)
2. Place on baking pan / cookie sheet and bake for 30 min in the oven pre-heated to 500 degrees to sear, reheat and infuse rub or marinade (the sear will simulate frying)
3. If sauce is preferred, do the above and when finished place in large bowl with favorite sauce and toss

With skin removed, the flavors from the seasoning used in the rub, sauce and marinade actually get to permeate the meat and make the wings far more favorable while using less seasoning and sauce to reduce mess. Never have I had anyone say they weren't as good as traditional messy wings...most say they are much better. They will be slightly sweet due to the sweet tea boil, but nothing that will rob them of their savory goodness complimented by a cold beer.

FYI -

I also boil my frying chicken in sweet tea to remove skin and add a slight sweet flavor before frying...almost immediately after removing the skin. Use the frying just to crisp up the seasoned flour coating.
