I don't do anything but put it on smoke. If it'a a big one I would put it on overnight. When you think it has had enough smoke, roll it up tight in foil so it doesn't dry out and turn up the heat till it hit's 160 near the bone in the thickest part and your done. If they did a good cure job it shouldn't need anything else.
