Joshua,

I have a similar rig I built last year based on a KMC tool. Had my welder build the frame and a neighbor donated the same shanks as yours. Bought the rest from KMC. I run a 8 flute coulter about 4 inches either side of the shank. I know this sounds close but it chops things up pretty good. Also run a 8 flute Coulter in front of the shank as deep as it will go (up to the hub). Doing this really chops up the area just in front in the shank. I have used it right behind a combine with only a spreader. I have sandy loam soil so it takes the ground good. Saved about 2,800 off retail from KMC (6,200) from them for a two row.If I knew how to post pictures I would . Also I run the coulter straight so they don't bed the land just chop it up. By the way I finally got a decent rain Wed night (2.5 inches) and maybe some more today. Made me feel a lot better bout things. Keep trying on your plow cause it took me a while to get mine set too.
