The crest is limited to a certain height, based on atmospheric pressure. At sea level, for water, it is about 30 feet, depending on that days local barometer. Try to siphon water with a lift of greater than 30 feet, and depending on the temperature of the water, it will start to boil at the top of the siphon, adding air to the system, and most likely break the siphon.
