A verbal contract is just as binding as a written one, both in law, and morally.
Written is preferred so that it is documented as to exactly WHAT details were agreed upon.
In the case presented here, it appears simply that one party doesnt want to honour their obligations.
Has anyone backed out on a grain contract??
