Its all about your C:N ratio of debris......

Beans being a legume fix their own nitrogen and retain more in the grain.

Cereals being grasses consume much nitrogen making up most of the cell walls.

The little bugs in your soil break down the carbon in the debris if debris is higher than about 25:1 C:N then you will notice nitrogen slump because it takes nitrogen to digest the carbon

Don't worry the nitrogen is saved just tied up. The only thing lost is carbon.
