We just wait until the pods are virtually all yellow with some completely dried, then cut 'em. Lots of times if it rains, or we get held up, they will be completely dead, dried before the Pickett gets there. Ideally for the combines sake we can cut them at night and they will be dried up enough that we can combine mid afternoon. The problem is that you will get more cracked seed coats running them too dry. Our local bean elevators used to dock us on anything over 14 moisture, until a new outfit came in and said that they wanted them at 18, because the lower cracked seed coat that they can get a premium from the canners. They used to throw out the "pumpkins" (green beans) as tare, now they leave them in the sample. It all depends on how the elevators grade. You really need to talk to the guys recieving your crop, get them out there to tell you when to cut, and at what moisture they want them.
