| Field corn can be as sweet as sweet corn, but you have to treat it right. You don't pick it on Wednesday for Sunday dinner. Like the old cook books (say Joy of Cooking, 1963 edition) say, you put the pot on to boil then you go pick the corn, shucking as you trot back to the kitchen for instant cooking. If you wait the sweet goes away fast. Plus field corn has some corn to the flavor and most of the modern sweet corns taste the same as eating straight sugar. Boring, I think.
