When I grew them, I did most of the above. Another thing to consider is if you have a rock trap, there is a larger sprocket to put on the rock trap beater to slow it down. I put in large wire concaves with every other wire pulled. It was suggested to me to cut a slot in the first concave where it meets up against the front of the rotor transition (on the angled part of that first concave) so that any beans that were threshed out by the feeder chain could simply drop out and never meet the rotor.
