Cut two pieces of small angle iron the length of your wire gaps and clamp them together around the wires using ubolt style cable clamps. You can enclose the wires in the space between the end of the angle iron tube and where the wires go into the weigh bars with rodent resistant spray foam. You can buy rodent repellant to spray on the spray foam if they eventually start to chew on it.

If your wires are small enough you might be able to do the same thing by making a cut down some metal conduit and squeezing it back shut with cable clamps.
