East Central, Nebraska | just the things i think about when trying to accomplish a similar task as you....
most of the world runs devices that were reverse engineered from working devices by chinese companies to undercut the name brand original creators. i would suggest looking up 'fussel farms' on facebook and seeing how they are doing things. i myself sat out at my pasture pondering the same thing, in a fussel farms video it has a bull walking through and it starts spraying his face and he backs off. that would never work for my herd but maybe if they were trained it would start working, im also not exited about spraying the faces of animals. the second problem would be when i see my herd moving to different location say to drink or eat that would be the optimal time to ensure they would get sprayed down but i have never seen them make the move one at a time, so there would be multiples trying to push through at the same time, meaning even if you figured out the spraying the last two thirds of the animal another one would likely be getting sprayed in the face at the same time. if you made the alley smaller then they just likely wouldnt walk through.
wildbuckwheat has an excellent idea of how to work this out though as i stated if there is a second cow pushing through you would have to find a work around for that also.
i have some security cameras around my farm that are in a closed system, meaning i use a software on a local computer to store clips and manage the cameras. that software has came a long ways in the last year detecting not only movement but what exactly the movement is. i get texts telling me what the camera is seeing. its impressive as it is scary. as i think about the same type of system your trying to create it would seem to me some kind of camera detection may work better then sensors, maybe not.
