Why grow winter peas planted in the spring?

I understand that they will grow and make seed then, they are cold tolerant but don’t need to vernalize but planting them as a spring/summer crop degraded that winter hardiness.

We produce and market quite a lot of winter peas but we only contract for fall planting because we want to maintain or improve winter hardiness.
