Thanks for the clarification on the fiber and point-to-point.  I run a PtP setup to my bins that are 1.8 miles away and from there I have/had/will have 6 cameras at irrigation wells to monitor drip oil.  I set that up about 6 years ago and it got damaged and I have the new parts in my office to make it work.

I have not played with any of the environmental sensor stuff.  I use a home brew fan controller system a friend designed that uses a Raspberry Pi running OpenHAB along with some ESP32 boards and sensors to control a few bin fans.  He's doing what you want to do but I haven't familiarized myself with it enough to understand how it all works.
