That’s what I’m saying. I can do wholes/halves/quarters at my butcher who is not USDA inspected.
If I was to do bundles or individual cuts it would have to go through a USDA inspected butcher which would be more expensive and more difficult to schedule.
That’s why we are sticking with wholes/halves/quarters
