There is only so much that even a good cook can do with bad beef.

Agree with you 100% about the ratio of GOOD cooks to bad.

I enjoy good food. I have sometimes pondered the lives of some poor saps that exist on horrible food and the wonderful experiences they miss out on.

The two cardinal sins of most bad cooks:

Underseasoning (most often salt)
Over cooking meats

And both are very easily solved.
