Probably worth a mention on that point- we almost always use our grills for scalding tomatoes to keep that heat out on the deck instead of in the house.   And charcoal roasting especially adds some great flavor for salsas and such. 



I use a propane turkey/fish fryer for canning. Keeps the heat and the mess outside.
