WHAT makes them crisp? Enlighten me> I'm no cooker or canner, I have been just been listening to some of those with experience but it seems no one knows the answer to the above questions.
WHAT goes wrong when the don't get crisp? Do they get crisper when the DILL is riper? Does HARD water make better pickles? Does Chlorinated water ruin pickles?
Need to start with good cucumbers, not oversize, overripe monsters. Soak in ice water for at least an hour before putting in jar. Have the jars in almost boiling canner, the faster you can get the jars filled and back boiling to start the clock, the better your pickles will be. You need to be very diligent on the clock, as soon as it's done get them out to start cooling. Mushy pickles are overcooked cucumbers. |
