ECIL | The smaller steak is a draw to single people who don't want a large steak. And the lower price makes it look "affordable" compared to a full lb steak. People will also pay for the convenience of not cutting a large piece of meat into smaller ones. For instance, during the holidays I can buy a prime rib roast cheaper than ribeye steaks. I can cut the roast into steaks. A lot of people aren't aware enough to do the math either.
