That would be the perfect time of year to go. I love the Parks in Utah. Only one I haven’t been to is Canyonlands and I hope to get there this winter.
Arches, Zion, Bryce all have plenty of hiking opportunities. All worth going to. All very different. Monument Valley is also nice to see.
If your really avid hikers and adventurous check out The Wave in northern AZ. It’s a 3 mile hike each way. Need reservations to go. Only so many allowed each day. They also have a lottery to enter each day. If I were younger I would absolutely try to get there.
Moab Utah is a good place to start. Several sights around there besides Arches to see.
Page AZ is also a nice area with the slot canyons.
Check out YouTube. It has a lot of suggestions. There are numerous other lesser known places to go that look like really neat places to see.
