We did Zion end of Feb 2021. Decent weather, but a bit cool. We were there the last week you could drive in the canyon. After that it was park outside and ride a shuttle.
Arches and Bryce will depend on the winter season. We ski Colorado every march and I really regret not going to arches while out there this year because it was so warm.
