I may get shot down on this, but I did a small job adding a couple sinks, I bought from Lowes the slide together fittings for PEX (no tool needed). Was leary at first, talked to BIL who is contractor in another state and he said no problem . They had a fitting ( I used two of them )that slid on and locked to 1/2 copper. These are expensive, I admit that, but I did not have to use a flame in flammable area or buy a tool. Anybody else use these? They were nice for small job and yu can take them apart. I shut the water every night for first week and weekend becasue I didn't trust them.

They are called shark bite fittings. Expensie but work well for small jobs. and as you said can also connect to copper pipe.

For a non critical fitting i have just double gear clamped. It is holding
