We run almost 200 hp on a single phase service with a 90 hp rotary phase converter and a 100hp vfd.
The vfd is dedicated to running the 50hp dryer fan motor. (It does the conversion from 1ph to 3ph, and thus has to be double the size it would take to run on 3phase.)
The rotary converter runs three legs, pit, and all conveyors and unloaders. (everything else except the single phase aeration fans.)
The single phase service is either 800 or 1000 amp, and is about 2 miles from a substation.

Those who say run a generator are asking for a huge fuel bill, more complexity, and ignoring the availability and reliability of rotary phase converters.
These converters have been running on thousands of farms for decades, and causing very little trouble.
