# of cattle has less meaning than lbs of beef.

We are harvesting more prime (market was paying for it and feedlots needed the extra lbs to cover breakeven). Now, there is a huge difference in prime. I don’t care for the stuff that is aged on the hoof and over fed. I simply don’t like seam fat and sinew in my steak.

That extra bark causes packers to buy more lean from other countries to grind as they mix the tallow in.

The shut down of chain space is expected.
