The way it was explained to me is that nerves in the ear act as a sort of map of the brain. By isolating the nerve responsible the brain is able to disregard the alpha-gal and not consider it a threat, thus the immune system is not activated. All allergies mare is the brain considering something a threat and using your immune system. As was stated, I do not know exactly how it works, but it does.
