North Dakota | A modern wheat with a similar nutritional profile and digestibility as ancient wheats like Emmer, Spelt, Einkorn and Khorasan. We have great wheat varieties to raise but terrible to consume. I realize most of that is how it is handled after it leaves the farm. Wheat used to be a meal. Had many of the vital nutrients needed by humans for sustenance. Now it is stripped of what little it has and a bunch of junk added in to make it somewhat palatable. That is what “modern” genetics should really be focused on…..IMHO. | |
