Ultra-pasteurized milk (UHT) is heated to at least 280 degrees F for 2 seconds to kill virtually all bacteria.
This gives it a significantly extended refrigerated shelf life (30 to 90+ days) compared to standard pasteurized milk, though it may have a slightly sweeter, "cooked" flavor | |
