Crazy talk incoming. In ye olde days I liked a Thomas Enlgish muffin, topped with an over easy egg, topped with bacon or cured ham. Delicious.

We started to exclude foods with a suspiciously long shelf life from the diet, Thomas' English muffins began to taste a little synthetic. Not disgusting like a Little Debbie product, maybe just a little 'off'.

We tried a 'keto' english muffin recipe linked below. Almond flour, coconut flour, butter, egg, baking soda. I prefer a wider muffin cooked in a cereal bowl and cut into thirds vs a standard ramekin cut into halves, probably a matter of personal preferance. And maybe I have been known to split hairs with regard to breakfast foods.

Saturday morning I fix an omlette with mushrooms/onions cooked in butter with cured ham and topped with cheese. Also tasty.
