It really has to be a consideration for shoppers.
As a long time but former pork producer , I use pork for almost everything. I don’t much care for hot house pork. Gimme a nice chop from a Niman Ranch producer any day. There’s a nice restaurant in Shell Rock serves a very big Berkshire pork steak and all the trimmings for $25 bucks. Prepared by the guy that raised them. He owns the restaurant. Fantastic.
