FL Panhandle | In my opinion, small bites will get you where you want to be if you are young. If the stars align, a big bite can also get you there. Rarely do the stars align. Big bites will get you where you don’t want to be potentially.
As was said, growing a cattle herd isn’t a quick process. If you buy 15, you just doubled your herd. If the first 15 are paid for, then the impact of the cost of those last 15 isn't as big. Pay for things as you go and stay out of interest costs as much as possible. YBS through Farm Credit may be a great option for expansion.
