Sugar acts as antifreeze for plants. Some species raised their sugar concentration in cool weather to increase frost resistance. That's why cattle prefer fescue in the farm with below freezing nights and kale and Brussels sprouts are sweeter after a frost.
With just a slight frost it could be that the undamaged corn plants had higher brix.
