Emoji are technically Unicode characters, so you aren't strictly referencing emoji; you're technically using a keystroke command that tells the app to change the immediately prior text to to the Unicode code point that it refers to.

Whether they're printed in color or monochrome depends on a *lot* of variables, and I'm not familiar enough with the edge cases surrounding that to provide advice. Suffice to say, emoji will often be printed in monochrome (unless explicitly colored in some way) even when on a color document. Your mileage may vary.
Sidebar: it (mildly) annoys me that this forum attempts to strip out emoji and all manner of other "special" characters. I'm not one of the "kids" who talk in only emoji, but I do use them here and there to better convey my intent behind a message. I know a lot of other farmers in my area do as well.
