I always think these used single axle beverage trucks would make good stock trailer pullers. Usually have decently high HP and automatics. Put a set of floats on the front and some grip tires on the drives, make sure it has or add diff-lock.

In-between option would be to get a single axle tractor pulling a gooseneck for now, then add a pot later if you want.

Do you have good yards to work in? No pastures or hills, gravel, mud? That seems to be the biggest drawback to a semi and pot is how flat footed they are, dang hard to get it into the places a 4WD pickup and gooseneck will go, Winter snow/ice and spring thaw are miserable times to get semi's and pots into anything but very well maintained and flat gravel yards unless you want to pull it around with a tractor.
