Pat the eggplant dry. Maybe coat with the cheese first. Egg is going to work better than milk.
If you like thick coatings probably never going to be satisfied because the pork panko will just not stick as thick. Might try a little coconut flour in the mix.
She makes great coated cheese sticks or balls but uses ground chicken and egg for that thick coating.
