Subject: Low carb "breading"


South Central MN
I love eggplant and the traditional way I have made it is to use an egg mixture then coat with bread crumbs. I wanted to try a low carb "breading" and was trying to think of another way to do something similar to how I made it before, so I put some pork rinds and Parmesan cheese in the food processor dipped the eggplant into milk, then the pork rinds The flavor was good, but I had a hard time getting it to stick. Any other suggestions from those that have been following a low carb diet?
Edit: I was out of eggs, so just dipped in milk. Maybe it would have worked if the egg was added to the milk ( or even skip the milk) to make the breading stick.
