Stale bread was her first choice, I suppose maybe because she didn't want to waste anything. But there was always the round box of Quaker oats in the flour cabinet. Sometimes crushed up saltine crackers.
Since we eat low carb my wife makes meatloaf pretty regularly. To replace the carbs she uses crushed up pork rinds instead of crackers or oats. Some onion and an egg. That's it. Always delicious.
Edit: sometimes a mustard sauce poured over the top. Usually just mustard on the table.
