Need to look at CFM air consumption of the tools you'd use vs. compressor sizing and duty cycle for actual air capacity. 3/4" will flow well beyond the output of most shop duty air compressors so without knowing more info, I'd say 3/4' would be plenty. Air lines are effectively storage though, so it's not that 1" would be a waste, just depends on cost difference. Could always do 1" mains and 3/8" service drops.

Blow guns will run a compressor out of air pretty quick, so I'd compare that highest demand to what your compressor will put out and see what you have.
