NW Washington | The internet and cooking shows have many recipes for pie crust. One common rule is not to overwork the dough. Leaving bits of unincorporated fat, such as lard or butter, will make the crust more flaky.
Also, lard melts at a higher temperature than butter or Crisco, which is a good thing. But the lard needs to be good and not smell like bacon. Here is a YouTube video on the lard-and-butter crust.
