Look down the chart on the Oreo Cookie column at the total carbohydrates. 120!
If you find studies that "prove" low carb diets "don't work" invariably their carbohydrate total will be above this level. Even the low carb community doesn't consider anything low carb till the count gets down below 120. They might be "lower" carb at 200 grams a day than 300 or more for the control, but they are certainly not low carb.
For low carb to work, the carb count has to be low enough to lower insulin levels. If insulin levels stay up all the time, the body is never going to switch to fat burning mode. High insulin levels are the problem. Continued high insulin levels eventually causes insulin resistance, exacerbating the problem. To reverse insulin resistance and repair the problem most people have to get down to around 20 grams total carbs per day. That's what I try to stay under.
