Food handlers, be it home or commercial, might know what they are suppose to do, but unless they are observed, many have bad habits. Commercial ones, with their gloves on, will "wipe" their nose, scratch their body, grab a phone/cellphone, and then go back to preparing something.
Of course, everybody is suppose to wash their hands before leaving the bathroom, and then turn/grab that dirty door knob/handle.
If the food gets cooked, this reduces the health risk(s). State Boards of Health generally don't require a through training for them, and managers tend to look the other way.
Children are affected the most with STEC. Adults to a much lesser amount generally.
